I call this recipe: "My WAC recipe - but make it upright"
Ingredients

18g Kenya WAC23 coffee, ground at 18g Kenya WAC23, ground at 32 Clicks on the Comandante C40

132g Lotus Water (5 Mg 4 Ca 5 So 3 Po) (100°C / 212°F)

25g Lotus Water (5 Mg 4 Ca 5 So 3 Po), room temperature
Directions
Place 3 standard-size AeroPress micro-filters into the filter cap and screw the filter cap onto the chamber. Place the AeroPress on top of a server.
0:00 - add 18g of coffee and 50g of water for blooming in a fast pour of 5 seconds.
0:10 - stir fast for 10 seconds.
0:30 - add water up to 150g in a fast pour of 8 seconds.
0:38 - put the plunger in to create a vacuum and avoid the coffee to further run through.
1:30 - swirl the coffee with the AeroPress gently (make sure to grab the AeroPress with the plunger and the server safely to avoid the plunger to pop out!)
1:45 - push slowly until 2:00
1:50 - finished brew should result in 125g of coffee; dilute it until 150g with room temperature water.
Pour the coffee back and forth between two servers 10 times.
Serve at a pleasant temperature.
