A non-inverted version of the recipe that won the 2023 World AeroPress Championship for Tay Wipvasutt of Thailand!
Ingredients
-
18g coffee, divided
-
149g water, divided (89°C / 192°F)
-
25g water (room temp)
Directions
1. Place 3 standard-size AeroPress paper filters into the filter cap, screw the filter cap onto the chamber, and place the chamber on top of the first server.
Place 16g coffee into the chamber. Pour 55g of hot water.
Stir 5 seconds (0.25-0.30) and insert the plunger for immersion.
Press 10 seconds (0.45-0.55). Coffee yield will be about 35g in the first server. Set aside.
Shift the AeroPress onto the second server. At 1.05 minutes, take out the plunger and pour another 2g of coffee into the chamber. Then pour hot water for 50g.
Stir 5 seconds (1.30-1.35) with a chopstick, then pour yield from Step 4 back into the chamber and insert the plunger for immersion.
7. Press 10 seconds (2.10-2.20). Coffee yield will probably be around 80-85g.
Add enough room temperature water to total 110g, then add hot water to total 154g.
Serve.
