Looking for a unique AeroPress summer drink that’s equal parts refreshing and bold? This Blackberry Coffee Cocktail is the perfect warm-weather pick. Made with fresh blackberries, mint, lime, and Metric’s Big Riff blend, it combines vibrant seasonal flavors with the rich depth of AeroPress coffee—brewed in larger volume with the AeroPress Clear XL.
Whether you're hosting a backyard get-together or simply craving something beyond your usual cold brew, this coffee cocktail recipe is easy to shake up and hard to put down.
Why You'll Love This Coffee Cocktail
This isn’t your average iced coffee. The AeroPress Clear XL gives you a smooth, espresso-style concentrate without bitterness, while the Big Riff blend adds notes of dark chocolate and citrus that pair beautifully with blackberries and lime. A splash of rum adds complexity (if you're feeling festive), and club soda keeps it light and fizzy.
It’s a cold coffee with fruit that’s as versatile as it is delicious—just as good without alcohol, and easy to adjust to taste.
Refreshing, Versatile, and Perfect for Entertaining
Whether you’re sipping poolside or adding something unexpected to your brunch menu, this AeroPress coffee cocktail is a creative twist that brings together bright fruit, bold coffee, and summer-ready vibes. Want to skip the rum? It still shines as a sophisticated mocktail with plenty of flavor.
Blackberry Coffee Cocktail with AeroPress Clear XL
Place your AeroPress Clear XL chamber on top of your carafe, making sure it’s centered on the carafe for stability.
Add 30g (two scoops) of pre-ground Metric Big Riff coffee to the chamber.
Pour in 400ml of hot water (approximately 185°F / 85°C).
Stir the coffee gently for about 3 seconds to thoroughly wet the grinds.
Gently insert the plunger ½ inch into the top of the chamber, making sure the plunger is entirely past the lip of the chamber (this creates a vacuum that stops your brew from continuing to drip through into your carafe).
Let brew for 60 seconds, then slowly press down the plunger until you hear a hissing sound, signaling the end of your brew
Cocktail Assembly
In two tall glasses, divide and muddle mint leaves with lime juice and simple syrup.
Add 1 oz blackberry purée to each glass and fill with ice.
Pour the brewed coffee evenly between the two glasses.
Add 2 oz white rum (optional) to each and stir gently.
Top each with club soda and garnish with fresh blackberries and a mint sprig.
