In the ever-evolving world of specialty coffee, my coffee experimentation knows (almost) no bounds. From unique brewing methods to innovative flavor combinations, I am continually seeking ways to find new and exciting flavor combinations. One such ingredient I’ve recently come to enjoy in coffee is cinnamon. This recipe explores adding cinnamon to an AeroPress brew to add some depth and warmth to the final cup.

The role of cinnamon in coffee

Cinnamon, with its distinct aroma and flavor profile, has long been cherished in culinary traditions around the world. When incorporated into coffee, cinnamon adds a layer of complexity and warmth that complements the natural characteristics of the coffee. Its subtle spicy notes can enhance the sweetness of the coffee while imparting a comforting warmth that lingers on the palate. Additionally, cinnamon boasts antioxidant properties and may offer potential health benefits, making it not only a flavorful addition but also a nutritious one.

What is the right coffee for a cinnamon-infused AeroPress coffee

While any coffee will work for the recipe, I’ve found more balanced coffees with chocolate, caramel, or nutty undertones work best to compliment the cinnamon flavor infusion. I’ve also found washed or more minimally processed coffees tend to do best. Some of the more highly processed coffees can be a bit overpowering when paired with the cinnamon add-in.

How to make a Cinnamon AeroPress

Step 1: Prepare the AeroPress

Begin by making 1:16 ratio coffee in the AeroPress. Prepare the AeroPress for brewing in the upright position. Grind 18 grams of coffee to near medium-fine consistency and add to the AeroPress. 


Add a cup or carafe below the AeroPress with the cinnamon stick in and set the AeroPress on top. You can alternatively add cinnamon powder directly on top of the grounds in the AeroPress. I’ve found the cinnamon stick allows for a bit more control of the cinnamon infusion, so I prefer that option.


Step 2: Brew the coffee

Add 280g of near-boiling water to the AeroPress and stir back & forth 10 times. After stirring, add a plunger to top to create a vacuum (and prevent coffee dripping out of the chamber), but do not push down. Set aside to brew for around 3 minutes.

Step 3: Finish the coffee

After the coffee brews, slowly push down on the AeroPress over 30-45 seconds. Pushing slowly helps reduce astringency in the final coffee and promote a more even extraction.

Step 4: Stir & enjoy

After finishing the brew, stir the coffee with the cinnamon stick and allow it to steep in the grounds as long as you’d like based on your preference. I tend to do a quick stir and then pull out the cinnamon stick until the coffee cools a bit to taste. After trying the coffee, if I want a bit more pronounced cinnamon flavor, I will add the cinnamon stick back to the carafe and stir a bit more. Be careful though because the cinnamon profile can become overpowering very quickly.
